Good Life Recipe: Low Carb Muesli à la Riederalm

If you are on holiday in the Riederalm, you will be spoilt for choice every morning at the breakfast buffet. A gourmet breakfast buffet is served here from 7:30 am, which leaves nothing to be desired. In everyday life, unfortunately the best treats aren't waiting for you when you get up. In the hustle and bustle of the morning, even the time for a healthy breakfast is often lacking. 

However, we can remedy this situation. The girls at the reception have made us aware that many guests ask for the recipe of our popular low carb muesli. We snuck into the kitchen and our colleagues revealed some secrets.

Of course, there are endless cereal offerings in the supermarket, but the ready-made mixtures usually contain a lot of sugar and rob us of energy rather than give it to us. But our low carb cereal is perfect to start the day in a healthy way. In addition, you can easily get the ingredients and the preparation is very easy. 

Ingredients Low Carb Muesli

The following ingredients are needed and can of course be modified or supplemented according to your mood. When choosing the ingredients, we naturally recommend - in accordance with the Riederalm philosophy - to pay attention to good quality and, if possible, to choose organic food:

  • 300 g coconut chips (white)
  • 75 g cashew nuts
  • 75 g hazelnuts, whole (coarsely chop as desired)
  • 60 g sunflower seeds
  • 60 g pumpkin seeds in their natural state
  • 45 g almonds, ground
  • 45 g white sesame seeds, peeled
  • 15 g chia seeds
  • 90 g agave syrup
  • Cinnamon & vanilla
  • 90 g water
  • 2 egg whites

Preparation - sooo easy.

Mix egg whites well with agave syrup and water first.

Then mix all the ingredients in a large bowl.

Spread the mass evenly on a baking sheet covered with baking paper and bake at 120°C top/bottom heat for a total of about 50 minutes. Attention - very important: at intervals of 15 minutes, mix/turn the mass on the baking tray so that the cereal dries evenly. After baking, leave to cool and store in glass containers. The muesli lasts for at least a month and it also looks decorative. 

If you like, you can add raisins or other dried fruits to the cereal. 

This creates the basis for a great, healthy, crispy breakfast. Our Riederalm Low Carb Muesli is best combined with natural yoghurt and fresh fruits or berries - there are no limits to your imagination.
